I think you're better off letting her know you write erotic stories. If you end up getting serious about each other, it's something she may not approve of further on down the track. If writing's a hobby you intend to continue on with and you tell her about it now, she'll (hopefully) get used to the idea. She might even find it a turn on.

Honestly I would tell her now and if she is uncomfortable about it then at least you know where you stand. Don't let her find out by herself otherwise she could see it as being deceitful.
As to how, just tell her you write erotic FICTION. Don't tell her that they are real and from past experiences. No girl ever wants to hear details, even if she says she does, she really doesn't. If there are things in your stories that she may not approve of, just tell her you don't either and you only write it because that is what the readers want. Give it to her to read, if she likes it, tell her that writing these sorts of things are one of your hobbies.
Introduce things to her slowly, but if she asks if you show it to anyone else, be honest!
If she doesn't like it, well then you know how she would feel about all of this.

This works like a charm. If you write a story about her and get it to her before you are expecting to see her, she'll be all worked up when you finally see each other. I've exchanged stories with a few girlfriends before and its a great way to turn each other on and to learn each other's fantasies.
