It is cornmeal, Chef K, and the meat is cured pork loin. The stuff they sell in the States as Canadian bacon is some form of ham, I think. Here we always call it peameal bacon. I think long ago it was coated with meal of dried peas rather than corn - hence the name. At St. Lawrence Market, one of the oldest in North America, the traditional thing to eat on Saturday mornings as you shop is a peameal bacon sandwich.
