I think the only way to pick just one is to choose the character I would like to be the most, far too many to list otherwise. I've looked through other's posts, seen the obvious and classic answers from the greats we all expected to see, but mines a bit of a curve ball, a character from an anime film.
So I choose Naruto Uzumaki from the Shippuden Movies. :D
