I would love to be a virtuoso pianist. I can read music very well, was a trumpet player in high school and college. But never learned to play piano. Something about pounding on those keys is magical to me. If I were a woman I'd want to be a great soprano singer. Cannot help it, but when a beautiful voice is powering through some emotional piece of music and hitting those high notes, my eyes water up. I'd be happy to teach you to solder. As for the Ukulele you're on your own. They all sound out of tune to me.
As for me, I'd like to learn to navigate by the stars so I could sail the world.

I can teach you to swim. I've known how my entire life. One thing though. While I'm teaching you all the correct techniques, I'll have to have a finger in your ass and one in your pussy. Otherwise you'll fill with water and sink. When the debate is lost, slander becomes the tool of the loser. Socrates

Easily fixed. Don't open your mouth. Swimming is easy. Go to the Y and get lessons. It's the fear of the unknown that can be scary. Practice in the bathtub. Hold your nose and lay under the water. And by the way, water in the mouth is just like cum. It won't go down your throat unless you swallow or inhale. When the debate is lost, slander becomes the tool of the loser. Socrates

I'd like to get my 2nd Dan black belt. I would have to work really hard for a sustained period. It gets harder as you get older! I'd like to sing in a chorus again (a lot of aspiring musicians here). Especially a cappella jazz. Writer of amateur erotica since 2011.. For an example see http://www.lushstories.com/stories/reluctance/the-alpha-male-part-i.aspx

Languages. Spanish, Italian, French (Most popular languages around my job) and maybe Russian for shits and giggles. Play an instrument. Add some more certification to my life.

I would like to be more patient with myself, I tend to get discouraged if I don't perform the way I imagine I should... One major reason I stopped playing tennis and sometimes struggle playing golf. I tend to do better with team sports. I would really like to be able to organize my time better so that I could write and read more. I want to learn how to more grounded... to be more in touch with my chi. Overwhelming RealityFrom Across the Room

I'd like to learn CAD.
And I'd like to become as comfortable and proficient on bassoon as I am on clarinet. I don't care to be great, or even as good as I am on flute and tenor sax, and nothing like as good as I am on piccolo and bari sax, but I'd like to be adequate for theater "double" work.

Besides everything that's been mentioned here (ditto on being multilingual :) ), I'd love to be a helluva good dancer. Good enough to be a backup dancer for all those pop artists out there. It's always been a random fantasy of mine.

I would like to be multilingual as well. I am fluent in Mandarin Chinese and English (obviously), and I took 4 years of high school Latin. However, I am very good at catching on to new languages so I would like to learn - Spanish, German, Japanese, and French.
I also would like to be a better dancer. I was never any good with hand-eye coordination, and I don't believe it's too late to start now.
That's about it for now.
