I was in the mood for something different for breakfast the other day, and looked in the fridge to see what I could come up with and settled on this, which turned out to be quite tasty, so I thought I'd share:
I fried some asparagus in coconut oil (375 degrees F) for a minute or two with salt and pepper, then laid some thin-sliced ham over the spears and let them cook another 30 seconds or so, then laid a slice of smoked Gouda over the ham and covered the pan while getting the eggs.
Cracked the eggs next to the asparagus added salt and pepper to the eggs, covered the lot and let the eggs poach.
Took out the asparagus/ham/cheese stack and laid the eggs over it.
Yummm!
