Bring a large pot of water to boil and cook your pasta. I like linguini or bucitini.
In a large frying pan, render some panchetta thats been cut intonstrips of lardons over medium heat. Add a handful of frozen peas and coom for about 2 minutes. Add 3 tablespoons of butter and 2 finely minced cloves of garlic.
Beat two eggs wth a splash of cream. When the pasta is done, add it to the panand take everythng off the heat. Add beaten eggs and as much Franks Red Hot sauce as you dare. Toss the whole lot carefully together.
Grate over some grated parmaganio, salt and pepper.
Serve yourself, and whomever you're with. Tastes best after a crazy drunken nght, when this recipe was born.

Turn your oven to 350 degrees.

When that’s all nicely mixed, pour the batter into a 8”x8” square pan that you’ve lined with greased foil such that the foil drapes over the edges of the pan.
That’s pretty much it, except for the secret part. The crack part. Have you guessed yet what it is?
It is salt.
But not just any salt. Maldon salt. Himalayan pink salt also works, as does Sel Gris. Kosher salt does not work; neither does table salt. You need rocks, Jenny from the block. About a teaspoon of ‘em, but kind of eyeball it, giving the top of the brownie batter a pretty good coating with the stuff. Once you’ve done that, put the pan in the oven, let everything bake for 30-35 minutes before cooling for one hour at room temperature, followed by one hour in the refrigerator. Cut them into 16ths.

Like the fabulous DLizzy I will admit to being a full on omnivore. ( I'm Chinese- there are far too many good things t eat!). In the last few years though, I've started to take more care about what I eat - I will take a great roasted eggplant over just an okay steak any day of the week. Also started being vegetarian for breakfast and lunch and saving the carnivore nature for dinner only.
So I guess this makes me bi??
