The only general thing I'd say are that the kind of handcuffs the cops use are absolutely the wrong kind for erotic play. i was going to post pretty much the same thing. the leather ones look better, are more comfortable, and easier to use. I'd shop around in person, if you can, for a pair that you like, test them out, make sure you can't slip out of them. there are a lot of styles, but this is the basic look:

I hate to say this but the choice of cuffs is the Master/Mistress not the sub's. Remember the sub is their to please their Master/Mistress
If you are going to use handcuffs, use the kind the police use - they are double locking - meaning that they won't tighten or unlock. You can tell a double locking cuff because there is a little point on the key that fits into a small hole in the side of the cuff pushing that in will double lock it. Best thing is to go to a "cop shop" or someplace that specializes in police gear. Gall's Inc ( ) is a great place to get handcuffs/leg cuffs.
