It means that when you log on, no one can see when you're online. When you go to your settings, you have the option to appear offline to either everyone or people that aren't on your friend's list. When you're offline, no one can send you requests for private chats. You're pretty much left alone, and free to only contact those you wish to be in contact with.

You can do this from the log in screen - run your cursor over the little blue question mark. This involves holding down shift as you log in.
Of course, if you use the full site on a mobile device you may not have the option to hold down shift. I'm unaware of a work around for iOS.
