BigShyPussyKins has already started a thread for Diabetes and Alcohol so I am going to restrict this thread to food diabetics can eat. Please post your serious medical questions to her thread as there are people here who know a lot more than I do about the condition.
Here I would simply like to pose this question for diabetics, for those who want to avoid becoming diabetic through what they eat, and for those who know of great recipes that a diabetics could safely eat.
For information purposes, there are two classes of diabetes depending on severity: they are type 1 and o type 2. Here is a good description on CNN's Website and other on WebMD::

Here is a recipe that I use to make an special dessert for myself and other that I love. I call it
"Blueberry Dream:"
First I rinse some fresh blueberries and take a palm-ful of them and place them into a cereal bowl.
I like them best at the bottom.
Second, I cover therm with 2 tablespoons of NO SUGAR Cool Whip (be certain it is NO Sugar)!
Finally I sprinkle the top of the Cool Whip with about 12-18 rice krispies.
The blueberries are a delicious wonder-food and will give you most of the flavor, the Sugarless Cool Whip will add smoothie goodness to them, and the rice krispies will give the dish a little crunch.
