Pimentos??

My parents pretty much grow every fruit and vegetable that you could probably imagine... And they often drop off a plethora at my house especially during the summer.

I had no idea that they even grew pimentos, but when my most recent stockpile of produce included them, I was a bit baffled.




What the hell do I do with these? I only know pimentos as the little red things stuffed into green olives.

If anyone has any ideas as to recipes or uses for pimentos I'm all ears. They have a Scoville rating pretty much at the bottom of the hotness scale for any chili pepper.
Roast them, marinate them, put them on pizza, add them to salsa or pico de gallo for flavor variation, put them on a sandwich, use them in a stir-fry, add them to a soup or stew, stuff them...

Are they similar to red bell pepper? They seem like a mix between bell pepper and tomato. I think my parents use them in salsa but i certainly don't have the patience to embark on that kind of endeavor.

I think I might just chop them up and sautee them with potatoes, mushrooms and onions.

I also received a bunch of jalepenos, and a variety of other chili peppers. I usually like hot peppers, but jalapenos have a very specific flavor profile that I find to be a bit specific in their application. (Maybe its because I spent many a summer picking jalapenos, and that smell seems to permeate every pore on your body).

I like the pico de gallo suggestion. I'm thinking fish tacos....

Pimientos are commonly used for making pimento cheese. It is also used for making pimento loaf, a type of processed sandwich meat.

What you probably have are cherry peppers, which is in the chili pepper family? They are the mildest of the chili peppers, with little heat and sweeter than a red bell pepper. You can use them just like you would any other seasoning, like onions, bell peppers, celery by chopping them without the seeds and the white ribs inside and add them to what ever you are cooking. They can be stuffed. We clean them, cut off the tops, I use the red part of the tops to add to my stuffing, discard the seeds and the white ribs inside. I like to stuff them with the same recipe I use to make crab cakes. Then bake them until the pepper is cooked. I cook them until the pepper is tender.
