I'd say that my only restrictions are that they are a minimum of 10 years older than myself, and they are in decent shape. Not model or perfect shape, but as long as they take care of themselves, I'd be open to someone who may be 40+ years older than me.

Too right. My biggest differences (so far) have been a woman 15 years younger, and one who was 7 years older. But it should always be down to chemistry (and legality).

Any age is fine, I think, my wife is 13 years younger then me, and still likes to do things I don't. I think if there is a huge age difference it should be a older woman, as they can still do and enjoy things that a older man can't do, but in all cases there are things that I know nothing about. But my wife sometimes want fucked real bad and I can not keep hard, due to p[ills, prostrate cancer, etc. so doesn't get the joys a younger man might be able to provide. each situation is probably different. I have a friend that used to help me out when my wife wanted to fuck, but sadly he lives a long ways away, and the wife doesn't want to find a new one.
