Early start for me, 10k charity run so a bit sore this afternoon but its all for a good cause.
Baked my mum a lemon cake for Mothers Day - my speciality! (Recipe below if anyone is interested)

Lizzy's Lemon Cake

- 6oz Margarine
- 6oz Caster Sugar
- 8oz Self Raising Flour (Sifted)
- 2 x Large Eggs
- 3 x Large Lemons
- Teaspoon of Vanilla Essence

1. Mix the margarine and sugar together into a smooth mixture
2. Add the vanilla essence for flavouring
3. Beat the eggs in a separate bowl and gradually mix in a little at a time along with the flour
4. Place mixture into a cake tray (the silicone ones are great) and bake for approx 45 mins at 180 degrees Celsius.
5. Keep an eye on it and test by sliding in a sharp knife - if it comes out clean, its ready.
6. Grate some of the peel off the lemons and then squeeze all 3.
7. When the cake has been removed and has cooled (but is still warm), pierce the top in several places and slowly pour over the lemon juice.
8. Sprinkle over a little granulated sugar (this is partly dissolved on the damp surface) and let it stand until completely cool.

I have. I woke up a bit hungover. I don't drink much, but I did last night. But, it was nothing a good run(2miles) didn't help. Followed by a nice ride on the horse. Now I'm off to the gulf for a picnic. My contribution is key lime pie. I'll share the recipe if you like.

Okay, MOST things I make completely from scratch: biscuits, pie crusts, bread, ect.

But key lime is different. It works to set up by the interaction of lime juice with sweetened condensed milk. My favorite recipe goes like this: (credit, Cook's Country) It wins people over again and again, even here in Florida were key lime is our hometown pride!

Process in blender 1/4c sugar with the zest of limes, I typically use about 4.

Mix lime sugar, with 1 bar cream cheese until creamy and smooth.

Add juice from limes(1c worth), 1tsp vanilla, and 1 can sweetened condensed milk

Blend.

Now I deviate from the standard a bit to help it set up better: add 1 tsp unflavored gelatin and 1 pkg instant French vanilla pudding mix.

Blend till smooth.

Pour into prepared graham cracker crust.

Cover with sweetened whipped cream.

I zest another lime over the top to make it pretty then.
Cake recipe! Ok, I think not many people outside Dallas know about this sweet temptation. Its sumptuous and savory, here is the recipe straight from home kitchen book smile

Chocolate Sponge:
½ cup flour
2 tablespoons cocoa
4 large eggs
½ cup sugar
4 tablespoons butter, melted


Preheat oven to 350 degrees; grease 9-inch round cake tin. Sift together the flour and cocoa, and set aside. Using wire whisk, mix eggs and sugar in a bowl set over a pan of hot water. Continue whisking until the mixture is light and creamy. Remove from heat and whisk until cold. Gently fold the flour-cocoa mixture into egg mixture, then fold in melted butter. Pour batter into prepared cake tin. Bake 30 minutes or until middle springs back when touched.

Chocolate Meringue:
4 egg whites
1 tablespoon cocoa
1 ½ cup sugar (divided use)


Preheat oven to 325 degrees, and line a cookie sheet with parchment paper. By hand or mixer, beat egg whites until foamy, add 1 cup of sugar gradually and continue beating until egg whites are very stiff. Sift remaining one-third cup sugar and cocoa together. Fold into the meringue mixture by hand. Spread onto cookie sheet. Bake until puffy, turn off oven and leave overnight.

Rum Syrup:
1 cup water
2 cups sugar
1 tablespoon rum or to taste

In saucepan, bring water and sugar to a boil. Let boil 3 minutes. Leave until cold, and add rum.

Chocolate mousse:
¾ cup butter
6 ounce semisweet chocolate
6 tablespoons cocoa, sifted
4 egg yolks
1 ½ cups powdered sugar
1 pint cream

In the top of a double boiler or over a hot water bath, melt butter and chocolate. Whisk to blend, then whisk in the cocoa powder. In a bowl, whisk yolks and powdered sugar until smooth. Pour the butter-chocolate mixture into the bowl and mix well, then gently fold in the whipping cream.

Assembly:
Use plastic wrap to line a 9-inch sponge tin with sides 2-inches high. Cut sponge horizontally into two pieces. Put one in the bottom of the tin, and soak with rum syrup. Pour half of chocolate mousse over sponge, and then top with another layer of sponge and remaining rum syrup. Top with remaining mousse, cover and refrigerate overnight. Just before serving, break the meringue chunks and place them on sides and top of cake. Dust with powdered sugar.
