Bacon is a guilty pleasure, not baked, not microwaved, fried is the only way, preferably in a hot cast iron skillet. And being a true southern boy, you have to save the bacon grease to season a variety of other things. Yum! I know, I can hear my arteries hardening, but it is worth it.
i smoke and cure my bacon i like it thick cut and very crisp i bake it on a rack so the fat drained away keeps it crisp

There have been times when I've considered going veggie, for health/diet purposes.

Then I remember bacon.
I have to have bacon done but on the chewy side. smile
How don't I like it would be easier lol.

But I don't like it squishy. Blech. It doesn't have to be crisp exactly but it has to be done. I always bake mine on a rack in a sheet so the fat drips off and the bacon stays flat AND no splatters. And once in awhile I'll sprinkle a mixture of ground pecans and a bit of brown sugar to the top of them when i bake them...delish.
It has to be sliced thick and fried crispy but still a bit chewy.



Only way I will eat bacon is if it is cooked over an open flame at a campsite.....
I consider bacon a comfort food. It takes my mind off these chronic chest pains ...

It shows bacon is one of the healthiest foods, about 10 on the horizontal and vertical axis (carb 1 & sugar 1)

Funny thing is chocolate appears to have 1/2 the carbs / sugars of apples
Chocolate has carbs 24 & sugar 23
Apples have carbs 49 & sugar 57

Less carbs & sugar = less weight gain

Animal fat (in bacon) is not fattening - that is done by the sugars and carbs, in case you were wondering.

So bacon and chocolate are less fattening than apples according to that bloke!
