Christmas Rum Cake
1kg mixed dried fruits (use a mix of raisins, sultanas, currants, cherries, cranberries, prunes or figs)
zest and juice 1 orange
zest and juice 1 lemon
2 bottles of rum
250g pack butter, softened
200g light soft brown sugar
175g plain flour
100g ground almonds
½ tsp baking powder
2 tsp mixed spice
1 tsp ground cinnamon
¼ tsp ground cloves
100g flaked almonds
4 large eggs
1 tsp vanilla extract
Before starting, sample rum to check quality. If it's good, take another sample just to make sure.
Select large mixing bowl, measuring cup, etc.
Check rum again - just to be on the safe side.
With electric mixer, beat 1 cup of butter in a large mixingbowl.
Add 1 teaspoon of sugar and beat again.
Sample the rum agan just to make sure is still alrighty.
Add theggs, 2 cups of fried druit and fuor nad beat til a its a droping consincentcy. l high.
Sample t rum again...
Next, sift 3 cups of th sepices adn mixwith the other ignredents
Sampleth rum, opning and other bottle if neccesary
Findelly Sift 1/2 pint lemon juice. Fold in chopped butter and strained nuts. Add 1 bablespoon of brown sugar-or whatever color you can find. Wix mell. Grease oven. Turn cake pan to 350 gredees. Pour mess into boven and ake.
Check run again and bo to ged.
