I'm writing an office sex series, but as the series develops it's turning into less of an office sex type of situation. He's still her boss, but now they're in a relationship. So when, if ever, should I change the category over to something else?

Let the predominate theme of each story dictate the placement. If it is going to be a long work, then the whole can be placed in novels. The moderator who varifies it can advise on a case by case basis.

The Wild Girl anthology need not be read in any order but does take place in the following timeframe

Wild at Heart- 1968. The story of Dani’s Great Aunt Evie.

Wild Oats. Part 1&2. -2021. Dani is 16 and sets her sights on her stepfather.

Wild Child. 2025. Dani is now 20 years old.

When you think it needs it.

The verifiers will do 1 of 2 things. Let you know if it doesn't fit and ask you to change it or if they aren't busy do it for you.

What some people do is not even worry about category until they're done. They just let the story flow and if it changes then it changes.
