For me, it has more to do with attraction and desire. In general, I find that incest stories focus more on the attraction aspect of it. IMO, hot sex is mechanical in description without building a sense of why the desire is there.
Romance stories focus on fantasy. Other niche categories tend to focus on the deed. Give me the desire. Give me the motivation.
