I can't say that there's anything I would "never" write about. I'm of two minds on certain subjects, but it really depends on what sort of reaction I'm looking for. I'm almost always concerned with entertaining more than I am with raw shock value, but there's a time and place for both. I've also got a bad habit of exploring subjects that unsettle me. Call it self therapy, if you like, but I like poking at the wound, figuring out why a certain topic bothers me.
More often than not, I end up hating the finished product, but then, that's all of my stories. However, if I can write something base and horrible, but put it together sensuously enough to still get an aroused reaction from a chunk of readers despite their proclivities, I'm more than pleased.

Interesting question... after reading some of your responses I've really had to think about my limits.
I never thought I would even be able to stomach reading anything incest related, let alone write about it, but last night I posted my first Daddy/Daughter story here. A while ago my ex (who is Dominant) instructed me to call him 'Daddy', and surprisingly I loved it. We started role playing, and I got more and more into it. In my mind this is totally unrelated to my own background and nothing to do with my own Father. I get it if other people don't understand this, a few years ago, I wouldn't have understood it either. I've noticed I couldn't call the male lead in my story anything other than 'Daddy', I'm pretty sure this is because 'Dad' and 'Father' are the names I relate to him, and I've never called him 'Daddy'... I found that quite interesting.
I won't write about anything to do: with children (all characters have to be over the legal age to have sex in my country... which is 16), bestiality, snuff, anything with too much violence, blood play, water sports, scat, necrophilia, and I won't do straight out , but I love writing non-consent/reluctance stories when the women gives in to her on desires in the process of what would be otherwise (or possibly it still is ... a very blurry area ~ maybe I should say, I'd write about , if the victim ended up loving it *shrugs shoulders*).
I would never write about beastiality. Come to think of it, I'd never read about beastiality.
Don't think I could write about criminal sexuality (unless the victim becomes a hero), BDSM, or gay male sex either.

Defecation, Urination, children, (I've roleplayed a lot with my lovers but one I could not do, nor want to write about), Bestiality, Necrophilia, felching (and sadly I did not have to look it up, there was a pub near by called the Biship and the Belcher, got the nic Biship n the Felcher)....
Lastly Incest....but for me it is Blood related Incest I do not like...I see the relationship with non-blood (Step parents) as more of a Taboo and a breach of trust as long as the participants are of age. this is also a question I poised for my one story's seems to fit into the Incest area from what I have read, but I feel dirty to do so (it is Step parent).
