The classic Canadian way to serve is a pile of 'em smothered in maple syrup - real stuff not flavoured corn syrup. Used to make homemade pancakes for breakfast every Sunday and douse them with syrup from my neighbour's sugar bush. Alas, now that I'm watching my blood sugar, that's largely off limits save for the odd treat.

I've always liked a squeeze of lemon juice and then a sprinkle of sugar on mine...
Perhaps you refer to crepes with the term "filling", however, my ideal way to eat pancakes is to put the topping on and then roll it up and have a nosh :P So it's kinda a filling.
I've wanted to make some pancakes for several months now, but, as with many great things, they are best enjoyed with great company.
As mentioned above, I too have never met a pancake that I didn't like biggrin

This is an interesting thread. I've honestly never heard of putting lemon juice on a pancake. Is this a British thing?

In my part of the world, pancakes look like this:



And crepes look like this:



But maybe there are some variations in between that I'm missing.

Oh, those are the same as what we call pancakes and crepes respectively here in Aus...
I've never had butter on a pancake, nor have I had anything savoury such as bacon.
And we were too poor for fancy fruit like berries and such.
Maple syrup, at least in my family, was non-existant, we only had honey or golden syrup.
Lemon juice and sugar was common in my family, but I've no idea if it's common countrywide
