A veggie sandwich would be filled with things like avocado, marinated articokes, grilled asparagus, baby spinach and some creamy cheese(s) in a calebrese bun! Yum!!
Peanut butter on one slice of bread, mayo on the other with lettuce in between. My mom made this sandwich and I loved it. My own kids were grossed out at the sound of it, but once they tried it, they liked it!
Strawberries and Nutella on any kind of sweet bread (or plain white) is fantastic. It would probably go great with a nice desert wine or even a plain ol glass of milk.

However, as far as real sandwiches go, I am rather partial to a chicken one, meat still hot from the oven, with a little mayo, salt and black pepper and maybe some fresh red or green peppers...
The bread should be nice and fresh and thick - I prefer something brown and grainy...
I'm also very fond of tuna and sweetcorn - nice thick doorstep (or a croissant)
Egg Salad Sandwiches are my favourite.
Nothing fancy, just some hard boiled eggs shredded, diced scallions (green onions), salt and pepper, and enough mayo so it's not too dry or sloppy.
Serve it up on some nice soft buns or bread with a slice of lettuce and I'm a happy camper.
My next favourite is also simple. Thinly sliced cucumber, tomato, lettuce and cheddar cheese on toasted bread with mayo.
1. A Montreal smoked meat on rye with a dill on the side.
2. A fresh Grouper on a bun sandwich that I had in Cabo. Probably the best meal I ever had there.
3. A BLT with fresh thinly sliced tomatoes and extra bacon.
4. Egg salad as was mentioned with green onions.

I love Ciabatta bread with olive oil drizzled on it, with a little bit of mayo and mustard, followed by salami and provolone. It needs lettuces or spinach and pickles.
Put it in the oven long enough to get the cheese melted and call it good.
