The Omnium badge is for those who've written a story in every category. So, in theory, once we add a new category, nobody should have an Omnium badge until they write a new story for that category, or transfer one over to that category.
Another option might be to have a badge for writing stories in a wide number (30?) of categories - "Genre Badge" or something along those lines?

I moved my pirate story to the Historical Category the day the category was posted.
I thought once moved there I would still have the badge.

I have a omnium badge question - I'm only 7-8 categories away from attaining it but I was wondering is it allowed/a good idea to maybe create a series for stories to go into the omnium badge so its easier to organize/see that every category is accounted for, esp if you have more than one story for the category we can pick which one we think is 'best' or what have you to go in that omnium badge 'omnibus' series as it were? I know it would be hard on the mods to have that done esp if we are like 80% of the way toward it already so that's why I ask, I don't want to tax the mod team more than they are already taxxed but it felt like an inspired idea as I am trying to organize my worlds /writings anyway?

It has been done -- see the stories by CumGirl. The basic series followed a topic progression satisfying the needed categories. It was quite a clever approach, simplifying the creative demand.

Not to burden the Dev Team, how about adding a 'Sort by category' option that sorts an author's stories per category in an alphabetical order, something that is accessible for readers, too.
